Dr. Cheryl Rock

Dr. Cheryl Rock is currently an Associate Professor of Food Science at the California State University, Long Beach (CSULB), USA since 2014. After completing her Associate’s degree in Biology and Chemistry at the Barbados Community College (BCC); she received her Bachelor’s Degree (B. Sc.) in Food Science and Technology with a minor in Chemistry from the Alabama Agricultural and Mechanical (A & M) University.

In 2007, she continued with her Masters Degree (M. Sc.) at the same university specializing in Nutritional Biochemistry and Carcinogenesis. In 2012, she obtained her Doctor of Philosophy (Ph.D.) from the University of Florida (UF), where she specialized in Food Engineering and Processing, primarily Power Ultrasound (PU) and Pulsed Ultraviolet Light (PUV) technologies. Her research experiences and interests include dietary intervention in reducing and preventing non – communicable disease such as Cancer, Type 2 Diabetes and Cardiovascular Disease.

Fun facts about Dr. Rock is that she served as a Judge in the Institute of Food Technologist Disney Student Product Development competition in Chicago, USA and she facilitates a short-term study abroad course in Barbados each year, where over 35 CSULB students has joined her to engage in some of the cultural activities.

ABSTRACT:

Many controversial arguments revolve around the production of so–called “FrankenFood” which asserts that the food industry produces a “Booffet” of food products that are genetically engineered as well as contain additives that are not supported by the general consumer. However, what is not often emphasized is the fact consumers make choices daily about their food purchases based on their personal preferences. Sensory analysis (or sensory evaluation) is a branch of Food Science that involves the use of mathematics, mainly statistical analysis (i.e., both qualitative and quantitative data) through the design of experiments using human senses (i.e., sight, smell, taste, touch, and hearing) for the purposes of evaluating food products. By analyzing the data recorded, it is possible to make conclusions and assessments of the products being tested.

Hesabu “Math-Is-Me-tician” Program

Our program is designed to provide year round academic support in mathematics and mentoring for Black students across educational institutions in the city of Long Beach (LBUSD, LBCC, and CSULB) and beyond. There will be two components:

  • The first is tutoring and mentoring for all program participants, with fun projects that connect mathematics to our cultural heritage and real world challenges faced in the Black community.

  • The second will be a mentoring and support network designed to provide LBUSD girls direct connection to academic coaches who will model and inspire the greatness within. Space is limited so be sure to apply soon!

Each grade level will be mentored by their prospective grade range, so selected high schoolers will receive a summer stipend to mentor students in middle and elementary school.  Even middle school students will be able to help mentor elementary students! Everyone can teach something as much as they can learn. We’ll have fun zoom activities to show you the math and science through cooking, projects, and crazy science experiments to get a break from school, but still keep your mind sharp. Join us for an exciting and (non-boring) educational summer!
